Cajun Turkey Jambalaya

I shared this recipe on a message board I frequent and it got glowing reviews, so I decided to post it here as well.

  • 2 teaspoons olive oil
  • 1 medium onion, diced
  • 1 medium sweet green pepper, diced
  • 1 medium sweet red pepper, diced
  • 3 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 16 oz package turkey kielbasa, sliced
  • 1 14 oz can diced tomatoes, undrained
  • 1 10 oz can diced tomatoes with green chilies, undrained
  • 3 c cooked brown rice
  • 1 tsp dried thyme
  • 1/2 tsp kosher or coarse salt
  • 1 tsp hot pepper sauce, or to taste
  • 1 tablespoon Worcestershire sauce, or to taste
  • 1 pound medium shrimp, peeled and deveined

Heat oil in a large Dutch oven over medium-high heat. Add onions, peppers, celery and garlic and saute for 5 to 6 minutes or until vegetables are soft. Add sausage and saute 2 to 3 minutes or until browned. Add remaining ingredients except shrimp and cook for 5 more minutes. Add uncooked shrimp and cook for 5 minutes or until shrimp is pink and cooked through. Remove from heat and serve warm with extra hot sauce.
